Carrot-Parsley Salad

This was a nice fresh tasting side dish.  Easy to do, too.  We did parsley with the first batch and then we had it again with cilantro.  We liked the cilantro better.  Probably because we like cilantro, so much.

Ingredients:
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1/4 teaspoon salt
10 ounces shredded carrots
1 cup fresh parsley ( or cilantro)

Preparation:
Just mix it together.  Easy.
