Cheddar Apple Salad with Maple Vinegar Dressing

Had this for lunch on Saturday and we both really liked it. Dressing is maple syrup, mustard, oil, and vinegar. Sweet and bitey, especially with some sharp cheddar cheese. We will do this again!
