Mashed Potato Pizza with Balsamic Glazed Onions and Bacon

This recipe is one that was inspired from one of our favorite places to eat back in PA: Fuel and Fuddle!

We kind of made it up as we went using ingredients we already had! It was so freaking good! We knocked this one out of the park!

The Toppings:
  • 2/3 cup Instant Mash Potatoes -prepared as per the package - (I know, I know, but next time we will use the real thing, also you can really use as much of this as you want, it is basically your sauce)
  • Cheese - again basically as much as you want, we used sharp cheddar that we grated on top (it was left over from the Cheddar Apple Salad we had last weekend)
  • 1 lb Bacon -chopped and then fried to desired crispiness
  • Onion - we had a half an onion left after the Texas Caviar so we used 1/2 of a red onion and 1/2 of a yellow onion, cooked in a little of the bacon fat. After the onions were cooked we added, 5 -6 shakes of balsamic vinegar for a little zip (man it was a good idea!)
  • Chives - a sprinkling or two

We liked this so much we can't wait to experiment with other pizzas. Stay tuned!
