Jerk Pork Kebabs and Sweet Potato Fries




These were totally awesome! I can't wait to eat these again and so simple and fresh tasting. Julie did all of it and man she did a great job. Just look at them! Yum! The onions and peppers are sweet and the jerk sauce gives it some kick. I really enjoyed this meal. Great way to get some fresh veggies in you! Will definitely do again!

Soak 4 wooden skewers in cold water for 30 minutes. Preheat a grill or grill pan over high heat.

Assemble the kebabs by skewering pieces of pork, pineapple or mango, pepper, and onion, alternating as you go. Brush with half of the jerk sauce and place on the hot grill. Grill for 4 minutes a side, basting with the rest of the jerk sauce. The kebabs are done when the vegetables are lightly charred and the pork is firm to the touch.

Serve with sweet potato fries: Preheat the oven to 450°F. Cut one large sweet potato into wedges; toss with olive oil, salt, and chili powder; and bake for 20 minutes.
