Pasta with Garbanzo Beans and Spinach

This was pretty yummy.  I think if I did it again I would add a bit more vinegar, but overall this was a really nice and healthy pasta dish.  Warms up well the next day to!


Ingredients:
1 pound pasta
2 tablespoons olive oil
1 medium onion, chopped
2 garlic cloves, crushed
1/2 teaspoon dried oregano
1 can (29 ounces) garbanzo beans, rinsed and drain
3 tablespoons balsamic vinegar
1 and 1/4 teaspoons salt
1/4 teaspoon pepper
2 bags (6 ounces each) baby spinach




Preparation:
1.) In large saucepot, cook pasta as label directs
2.) Meanwhile, in 12 inch skillet, heat oil over medium-high heat until hot.  Add onion; cook, covered, 5 minutes, stirring often.  Stir in garlic and oregano and cook 30 seconds.  Stir in beans, vinegar, salt, and pepper; cook, stirring often, 5  minutes.
3.) Drain pasta, reserving 1 cup pasta water.  Return pasta to saucepot.  Add spinach, bean mixture, and reserved pasta water; toss gently to combine.
