Lemon-Blush Napoleon

I was in PA this weekend and my mom and I did some cooking! We saw this and thought it looked like a healthy desert. It was OK. It seemed really hard to eat. Does anyone know how to eat something like this? Every time I bit down on or tried to cut the wontons, all the delicious lemon filling gushed out! Bummer. But as I said, the lemon filling was awesome, but this coming from someone who could probably eat lemon curd by the spoonful!


Good, but probably won't do again. It was fun to try something different.


Yields: 8 servings

24(3¼- by 3-inch) wonton wrappers (about half 12-ounce package)
2T. margarine or butter, melted
4t. coarse sanding sugar (see Tip)
c. plain nonfat Greek yogurt
½c. lemon curd
6c. fresh rapsberries
Confectioners' sugar for dusting
Tips & Techniques
Sanding sugar can be found in the baking aisle of some supermarkets, or in specialty stores where cake-decorating supplies are sold.
Lemon curd will be found on same aisle.
Wonton wrappers are usually in produce section with the oriental vegetables.

1.Preheat oven to 325°F. Grease 2 cookie sheets. Place 12 wonton wrappers in one layer on sheet of waxed paper. With pastry brush, lightly brush with some melted margarine and sprinkle with 1 teaspoon sanding sugar. Turn wontons over; lightly brush with margarine and sprinkle with 1 teaspoon sanding sugar. Place wontons on 1 cookie sheet. Repeat with remaining wontons, margarine, and sanding sugar.

2.Bake wontons 12 to 14 minutes or until golden on both sides, rotating cookie sheets halfway through baking. With spatula, transfer to wire racks to cool. If not using baked wontons right away, store in tightly sealed container at room temperature up to 3 days.

3.In medium bowl, stir yogurt and lemon curd until blended. TIP: Don’t do this too far in advance or it will lose it’s thick consistency.

4.To serve, arrange 8 baked wontons on 8 dessert plates (or place all 8 on large platter); spread 3 tablespoons of yogurt mixture on each. Arrange 9 raspberries per wonton on yogurt mixture. Repeat layering with wontons, yogurt mixture, and raspberries. Place remaining 8 wontons on top. Dust with confectioners’ sugar to serve.
