Mexican Pizza
This was really good. Pretty simple, but has every thing you would want. The refried beans make a great "sauce" and you can almost load it up with whatever you like. We used a red pepper, Oh, so good! We are going to do this again. I think next time we might add a few picked jaleopenoes, instead of adding hot sauce because we did feel it needed some kind of acid. This also may be because we didn't use the sour cream as was called for. Enjoy!
1 c salsa
1 14.5 ounce can fat-free refried beans
2 T ground cumin
1 small onion, sliced
1 bell pepper (any color), sliced
handful fresh cilantro, chopped
1 avocado, diced
3/4 c lowfat sour cream
1 c lowfat cheddar cheese
1 Pizza Crust
Directions
Spread can of beans on each crust, following with the salsa, cheese, onions, and peppers. Sprinkle on cumin, then place in oven and bake until crust is golden brown and cheese is melted.
Slice each pizza into six pieces, then top with cilantro, some avocado and 1 T lowfat sour cream. Drizzle on hot sauce (optional)!
