Kale Chips

So a co-worker grows some veggies at home and is kind enough to share some of them with us.  This week she brought in a bag of kale and I thought this would be a great opportunity to try making kale chips.  I have heard a lot about then over the last couple of months but never had a chance to make them.

They are really, really good!  I don't know if my expectations were low or what, but both Julie and I were kind of impressed with how yummy and satisfying they were.  Now, I don't mean satisfying like they make you feel full, but they have the crunch you want from potato chips without the feeling full part.  This was a nice healthy way to get a crunchy snack!  We are going to do this over and over as a snack!  It make not look the prettiest, but man they are good!

P.S. Make way more than you think you want.  We flew through 2 baking trays of them no sweat.

Ingredients:
Kale (as much as you want)
Olive Oil
Salt
Pepper

Directions:
Cut out the thick stem of the kale and rip the kale into chip size pieces
Toss with some olive oil, salt, and pepper to your taste (you really don't need more than a tablespoon of so of oil, max)
Bake at 350 for 10 to 15 minutes.
