Curried Red Cabbage
This was something found in a cooking class we took from Sur La Table a while ago, that we loved. Loved it! This was our favorite thing from the class we took, which was really fun by the way! The cabbage gets a nice sweetness from the brown sugar and there is quite a kick from the curry. We just are using a store bought red curry, but you could probably do whatever you want. This was a really great healthy meal. We served it with some sweet potato fries. The whole house smells heavenly.
1/2 head of red cabbage - thinly sliced
1/2 head of red cabbage - thinly sliced
1 - 2 shallots diced
1 tbsp curry
1 tbsp brown sugar
1/4 cup chicken stock
oil
salt and pepper
In a large pot, heat oil on medium high heat, add shallots and cook until softened. Add the curry and cook for 30 seconds to allow flavors to come out. Add the cabbage, and stir. After cabbage has wilted a bit add remaining ingredients. Turn heat down to low, cover, and cook until cabbage is sweet and tender about 30 minutes. Season with salt and pepper.
