Sloppy Joe's and Eggplant Two Ways
Tonight Sloppy Joe's! We use ground turkey and Julie has a secret recipe for the sauce. Nothing out of a can here people. I love her sloppy joe's. I will never go back to the canned stuff again. (if the want the recipe, ask me for it, it is not that complicated).
Then we did eggplant two way. Sliced it up. Some we just browned in a cast iron skillet and some we breaded and baked in the oven. The breading is bread crumbs, Parmesan cheese, oregano, and basil. I whisked up an egg with a little water and dipped each slice of eggplant in the egg, then dredged in the bread crumbs. Then we bake in the oven at 375 until it looks done. (sorry this is not exact, but we just did this off the cuff)
