Salmon with Spicy Pickles


This is a modification of a Belly-Off recipe called Cedar Plank Salmon.  The modifications were necessary because we don't have any cedar planks and because it is too cold out to grill.  This was actually pretty good.  The cucumbers were great.  They were like home made pickles and added a nice sourness to the fish.  Overall it was a pretty good little fish dish.  My only complaint would be that it was a little hard to eat because we left the cucumber chucks pretty big.  Next time, I think I will cut them up a little smaller probably around the size of a dice would work great.

Directions

1.
Soak a large, untreated cedar plank in water for at least 2 hours.

Combine the cucumber, vinegar, red pepper flakes, sesame seeds, and mint or cilantro in a mixing bowl. Season to taste with salt and pepper.

Preheat the grill on high. Lay the cedar plank on the grill. Season the salmon with salt and pepper. When the plank begins to smoke, lay the fillets on it, skin side down. Close the top and grill for 10 to 12 minutes, until the salmon flakes with light pressure from your finger.

Top the salmon with the cucumbers and garnish with a sprinkling of sesame seeds.
